Because miso is made primarily from soybeans, the tamari that drains off is also predominantly soy-based, with little or no wheat involved. The result is a sauce that's thicker, darker, and noticeably richer than standard Japanese soy sauce — with a more complex, almost wine-like depth.

Coconut aminos have had a serious glow-up in American kitchens over the last decade, riding the wave of paleo, Whole30, and low-sodium eating trends. But beyond the health food aisle positioning, there's something genuinely interesting going on with this ingredient.

Coconut aminos are made from the fermented sap of coconut palm blossoms — no soybeans involved at all. The result is a liquid that's darker than you'd expect, mildly savory, and noticeably sweeter than any soy sauce or tamari you've tried. The sodium content is also significantly lower, which matters to a lot of home cooks.

Here's where people go wrong: they treat coconut aminos as a straight one-to-one swap for soy sauce and then wonder why their dish tastes slightly off. The sweetness is real and it will affect your recipe. In a stir-fry sauce or a teriyaki glaze, that extra sweetness can actually work beautifully — but in something where you need clean, sharp saltiness, it can muddy the flavor.

It's made from soybeans but isn't fermented the same way traditional soy sauce is — instead, the soybeans are treated with hydrochloric acid and then neutralized, which breaks down the proteins into free amino acids.

The flavor is soy-sauce-adjacent but thinner, with a slightly different saltiness and none of the fermented complexity you get from a well-made tamari or aged soy sauce. It's not bad — it's just different. It works well as a lighter seasoning when you want a hint of savory depth without a strong fermented note.

How to Actually Use This Knowledge in Your Kitchen

So what do you do with all of this? A few practical guidelines that'll immediately upgrade your cooking:
